After living in 4 countries and finally landing in the New York. I noticed small health issues accrue when I moved to the United States from Europe.
It started with getting hypothyroidism once I moved to New York from Zurich, Switzerland.
After trial and testing various synthetic drugs to assist my thyroid, it seemed ridiculous to me that I would have to ingest chemicals in order to assist a deficit in my Iodine intake.
So what was different from my diet in Switzerland to New York? Well, nothing much had changed, just the quality of food was greatly diminished.
So after researching and speaking to lots of women around New York. It was clear to me that the occurrence of hypothyroidism in the USA was very high. About every second woman i spoke to had Hypothyroidism.
So what was the difference between living in Europe and New York? After extensive research, lots of things were pointing to GMO related foods. With GMO's presently being banned in Europe and GMO's are practically in every food here, it was clear to me, that this was one of the causes of the health issues I was experiencing.
So after spending lots of money in health food stores and not feeling too sure about whether GMO's had crept into the food at all. I decided to control things a bit better myself. I decided to start my own non-GMO garden at home.
So for those who have ever lived in NYC, will know that we are not granted a lot of space when it comes to apartments.
I looked around for something affordable, appealing and design smart. I found Urbio! Magnetic pots that can be mounted onto magnetic wall panels and appliances like your fridge.

Using EcoScraps, Organic soil that I found from my local Hardware store. I refuse to use Miracle-grow which is affiliated with GMO's.
There are a few reasons why I started the organic kitchen project:
1) Better control over the foods I ingest
2) Eliminates expensive food costs
3) There's something fun about growing your own plants and vege's.

Alfalfa, spinach, parseley, beets, carrot, beans, peppers, chives, wheatgrass, tomato, sage and dill.
I am all about alfalfa, its easy to grow, you don't need soil and in a week, you can eat all the alfalfa you could ever want.
So as summer goes by and the plants grow. I will be posting updates on the quality of the vegetables and the state of my health.
